RECIPE: Delicious Fruity Minty Granola
Try something a little different for breakfast
I don’t know about you but I find it really hard to eat in the mornings never mind make something nice what with trying to get dressed and out the door in time. More often than not I end up eating a breakfast sandwich from IGA or energy bars so I wanted to come up with something incredibly healthy that would release energy slowly over the course of the morning.
This only takes 5 minutes you have no idea how good this tastes.
So the ingredients are really simple but the fresh stuff really livens things up.If you really want to push the boat out you can go for all that organic, grass fed stuff.
Toss the raspberries into a bowl. You can make this mixture in advance on a Sunday and just top whip them out of the fridge each morning.
Slice the top and bottom off the orange.
This is the tricky part where you have to run your knife around the outside of the orange. You don't to be doing this half asleep in the morning! Do it in advance trust me!
You'll have a lovely peeled orange that looks like this. Simples
Hold it over the raspberries and grab your knife.
What you are doing here is taking out all the segments of orange pulp. This is a real chef type trick so pat yourself on the back you've learnt something new and none of those annoying pulpy orange bits. Pure flesh baby!
When they are all out squeeze the shit out of it so as all the juice goes into the bowl. So that is the fruit mix done. Like I said make enough of this in advance and just have it covered in the fridge.
Bang the yoghurt into a bowl
Squeeze in the lemon juice
Grab a big handful of mint. Pick the leaves away from the stalk.
Scrunch the leaves up into a little ball.
Grab your big sharp knife and cut it into as thin little strips as you can. Make sure not to cut yourself!
Stir the whole thing up. Again you can make this yoghurt in advance so as you can just pull it out of the fridge in the morning and pour it on.
To assemble start by pouring some granola in to the bowl
Scoop the fruit mix and a couple of fresh mint leaves shredded on top of it.
Pour on the yoghurt and eat it straight away. 2 Minutes to assemble and absolutely gorgeous!
Don’t just think that this is some boring old granola recipe because it tastes way better than that and crucially you can prepare half of this in advance and you won’t get bored of it after a couple of days.
Get it all ready on a Sunday night and get it into you before you walk out the door and sit back and marvel at the additional energy boost you get.
